You need to control some things in the process for a safe product for you and your family and I have combined these things in a kit for you to use with complete instructions.  You can email me through eBay at any time with questions. We control the curing with N/N cure, control the acidity with encapsulated acid, control bacteria with heating at the start. I have been making dry and semi dry sausage commercially for the last 35 years and now use the very same method that are used in this kit for my hobby sausage. You can heat at the start using a smoker, your oven, or a turkey cooker dry as an oven. You no longer have an excuse not to make dry sausage. Every one loves the product and you will also.
